The Extra Virgin “Sant’Andrea” Olive Oil is a product of our agricultural company of the same name. It is obtained exclusively from Taggiasca olives grown in our olive groves and is certified organic since we use only organic farming practices.
Our trees are fertilized at the end of winter using only organic fertilizers, and protected from olive fruit flies with the aid of pheromone traps and kaolin, without using pesticides. Our olive groves are also left to naturally grass over and mowed at the end of spring (herbicides are banned from our lands) and we avoid tilling the land in order to keep the natural biome unaltered.
The olives are harvested from the end of October until mid-December, collected in plastic crates and then transported immediately to our oil mill.
As explained in the section dedicated to our Mill (click here to view), we use a water-cooled crusher (to avoid overheating the paste during pressing), temperature-controlled kneading and a two-phase extraction (to leave as much of the olive polyphenols as possible in the oil).
The resulting oil is delicate, but nevertheless, full of flavour. It is ideal for seasoning the more refined dishes and in particular, fish Carpaccio, steamed shellfish, bresaola with rocket and parmesan, and fresh pasta together with Parmigiano Reggiano. It is also perfect for drizzling over fresh salads and grilled vegetables.
Each bottle is hand-wrapped in coloured aluminium foil providing complete light protection: this measure – together with the higher content of polyphenols – allows the oil to maintain its original aromas over time.
